A class of organic compounds that are derived from a glucose that has been modified by an amino acid. These compounds are anionic sulfur-containing glucosides, produced as secondary metabolites by plants of the order Brassicales, which includes cruciferous vegetables. Glucosinolates can be toxic if ingested at high doses but lower doses are under investigation as potential tumor inhibitors.
